Sweet Potato Souffle

If you are still putting marshmallows on top of your sweet potatoes (dry heave) and wondering why your kids won't eat them, this recipe will save your day. It is the kind of dish that tastes like dessert, yet contains enough vegetableness to count as a side. En-joy.

Sweet Potato Souffle
Boil 5-7 Sweet Potatoes until tender. Remove skin.
Mash with:
2-3 eggs
1/2 can condensed milk (more if needed)
1/4 cup sugar
1 tsp cinnamon
1 tsp nutmeg
Put in baking dish and add topping:
1 stick of butter
1/2 cup brown sugar
1 cup pecans (crushed)
Bake for 1/2 hour to 45 minutes at 350.
Watch topping to make sure it doesn't get too brown.

  1. This is almost exactly how I make it! (I put some crushed cornflakes in topping.) And it doesn't just work on kids - Even my dad fell in love when I made it for him a few years ago!

    Maybe I'll make this and serve it while they watch those videos. I could potentially get 7 minutes of uninterrupted blog time!

  6. I don't do the marshmallows either. I'm a brown sugar, pecan topping kind of girl, too. Except, I do use the canned sweet potatoes. Not fresh, but oh so easy.

  7. I can't stand marshmallows...I think they totally ruin the sweet potatoes. Your dish sounds divine! I want to try it but I'm not cooking Thanksgiving dinner this year. (boo hoo). Maybe I'll get the ingredients and make it at my sister's house. Glad you shared it!

  8. Wow that sounds wonderful and good for you too! Well all I have to make for thanksgiving is a taco dip. No cleaning just a spicy little mexican side. I'll have to try yours sometime!!

  10. I used to really wonder how they got those sweet potatoes to be orange. I thought they were just regular potatoes injected with some kind of dye, which scared me a little bit. Everytime I hear someone talk about sweet potatoes I laugh on the inside.

  11. MMMM. i missed them this year. Ellie had the stomach flu, so we were holed up in a hotel in missouri. then she poked my eye with a straw and i spent the night in the ER. Good times.

  12. yum! this is how my family makes them...john was shocked that we eat them without marshmallows but seriously, this tastes so much better. you can't go wrong with butter, brown sugar and pecans!
